I've poked around briefly (don't want to spend 15 hours spelunking the depths of the forums), but I cant seem to find a way to find the Z component of character/hotspot locations in wow. When I Googled it, I found a discussion relating to the fact that blizzard doesn't want us to know them and therefore purposely hides them, but does anyone know of a way/addon/command to find it? I'm about half way done with a 1-90 FULL grind profile (just need a way to find the Z components, don't want to send someone to the ban hammer for doing it improperly). If anyone could walk me through how to get those points it would be great. and much obliged.

Use the dev tools. One of the panels has a current location to where you are at. All you have to do is hit the refresh icon. It will spit out a location like 1346.45, 456.67, - 43.12

That -43.12 is the z axis or elevation.

So with using letters it is like this.
      +-xxxx.xx, +-yyyy.yy, +-zzz.zz

On the right side of your hb panel where you hit start configuration and all of those hit the button that says dev tools and follow what I wrote earlier.
