i know this may vary between servers... but as a general rule, what would be the best ore to aim for for the best profit?
Saronite Ore because of the quantity you can get in Scholozar. Even if it only goes for 12-14g per stack you can get 3 stacks for every one of any other kind of ore at least in my opinion. Also if worst comes to worst you can smelt the ore and vendor the bars for 25g per stack if demand gets low. With that said check AH sometimes adamantite and fel iron ore pops up to 70-100g per stack on a few of my servers. Then I farm for them for a couple of hours.
